About the chef

Raised in Southern California Michael first discovered his talent for cooking at the early age of 8 cooking for his siblings and family in his grandmothers kitchen. He began cooking professionally at the age of 16 working for local pubs and pizzerias. After graduating high school and after a short stint in College he found himself promoting clubs and working in restaurants located on the Westside of Los Angeles. Realizing that this was his calling he packed his bags and moved to Europe to continue his training and eventually graduated from the Le Cordon Bleu program to make it official. Making his way back to the states Chef Michael went to work for the famed Patina group for a few years and other Hollywood boutique restaurants such as the Tangier and Le Figaro Organique. Wanting more stability he went to work for a myriad of hotel properties, such as the Hyatt, Hilton, and Wyndham. Realizing that there was little room for creativity in the hotel industry Michael left and took a few months off to think about what direction he wanted his career to go. He had not yet found a kitchen he could call home until he moved back to his hometown of Hacienda Heights, ca. located in the San Gabriel Valley. This is where he met Raymond Boulos owner of Sage and budding restaurateur. They instantly hit it off and Raymond recruited Michael as his Executive Chef. Giving Michael the creative leniency to work his own magic. He went straight to work developing a California Spanish contemporary menu and concept. Utilizing his first menu to retrain culinary and front of the house staff Michael believes that all menus should be changed seasonally. Expect new and upcoming menus to high light more French and Japanese flavors still keeping with the Spanish tapas concept emphasizing on fresh, seasonal product. Michael is a big supporter of organic product and believes in the well-being and health of his clients, "It's a healthier way to live and eat with out sacrificing flavor." He states. You can often find him shopping for unique and organic product at local farmers markets early mornings.
